Any one fancy Braised Lamb Shanks (pix intensive)

its been a while since the last food posting but last weekend was so packed with good news from our players that we did a feast at home. Actually its a farewell dinner for one of my favourite food kaki and customer Honda-San who will be leaving for his new posting in Nagoya. Apparently his new home will be 10 minutes from the famous Nagoya Castle and a trip is planned for 2014.

without much ado, here're the sequent from a dish cooked with no recipe. just blind feel and the ingredients available......

in fact i had a different recipe in mind but when i saw the lamb shanks at Hubers', cannot tahan and change course immediately...



nothing needed, just a dash of salt and pepper before it gets brown. then brown it a second time, this time with a generous cup of red and a cup of white wine. the wine will help to take away the lamby taste and will also add a citrus zing to the dish. you can add 4 to 5 garlic but as my guest is allergic to garlic, i did not use any but added more rosemary instead.



saute onions (red and/or white), celery and carrots, then add the brown shanks on top in a french oven.



add chicken stock, the leftover wine from the browning and fill to about 3/4 of the pot. instead of using can tomatoes i added a generous heap of cherry tomatoes. if you like you can also add tomato paste. A handful of rosemary, thyme and 6 bay leaves to bring on the flavour.



whack it into the oven at 130 degree for 4 to 5 hours. here's how it looks at half time, 2 hours later....



after 4+ hours, i removed all the shanks and continue to braise the vegetables and adding 3 large potatoes (boiled but not too soft) for another half an hour.

at this stage, the meat will literally fall off the bone...

all gone in 25 minutes and its not heavy at all.

OMG, this is 1 of my favourite food. No wonder I still cannot be wean off my medicine for HBP & choresterol. Damn.
